We attach our self-esteem to the kind of cars we drive, the neighbourhood we live in, the grandeur of our houses (even if it doesn't necessarily feel like home), the labels on our clothes and so on. Although there's not much one can do usually in case they cannot afford a car or a house they like, they can always resort to cheap, knock-off labels to make themselves feel better. There's an entire industry, like a parallel universe, dedicated to producing cheap duplicates of the hottest fashion brands in the world. Despite countless raids, airport interceptions, lawsuits by luxury brands and coalitions dedicated to impede the production distribution of these illegal products, like the International Anti-Counterfeit Coalition (IACC), business is booming! For decades hordes of people have been flocking to places like Fashion Street in Mumbai and Canal Street in New York City to buy their favourite brand/designer's latest fashion, at a fraction of the cost. Counterfeit products have even moved online with the International Trademark Association claiming that $460 billion worth of counterfeit goods were bought and sold last year, with most of the sales happening online, according to Fashionista. "The online part is growing exponentially," said IACC President Bob Barchiesi to Fashionista. "Folks will be shopping on marketplaces and think they're buying a secondhand, expensive handbag and it's a fake," explains Barchiesi. "There's so many different distribution channels now online that are readily available for consumers, one, if they're looking to buy fakes, and, two, if they think they're getting a bargain and instead they're getting a fake." Fake products manufacturers have upped their game significantly as the fake ones have become extremely hard to differentiate from the real ones, especially since an outbreak of 'super-fakes' or 'Triple-A' fakes in the fashion world about five years ago, and they fetch almost as much as the real thing. "One can sell a counterfeit for a lot more money if the buyer thinks it is a genuine piece at a slight discount," said The RealReal Chief Authenticator Graham Wetzbarger adding that "these bad guys are investing more into making the bag only so they can increase their margin by selling the pieces to folks who don't know better. The con is no longer, 'how cheap can I make a knock-off?' but, rather, 'how much do I have to spend to get someone to pay top dollar?'" "Do we have the freedom to wear whatever we want, when there are no dress codes for men?" asks young Mumbai designer Masaba Gupta, through her "Can't" series of T-shirts and caps launched as part of Tiger Lily, Spring/Summer 2018 line. Kallol Datta introduced a range of hijabs, as part of his runway collection in 2015, with pattern cutting experiments of 3D inserts, embellished in tassels and foil print In January 2016, Dolce & Gabbana released a "modest-wear" range, joining the likes of Oscar de la Renta and Tommy Hilfiger. H&M released a first advert featuring a Muslim woman in a hijab in 2015, and House of Fraser now stocks athleisure hijabs, designed for Muslim women to wear while exercising and swimming. But the rebellious interpretation of a conservative style has seen both criticism and cheer. Veteran designer James Ferreira welcomes the newfound reverence. "We've endured the West's interpretation of fashion for far too long... open any magazine, and there are tits all over," he says. Ferreira first designed and retailed a range of hijabs with badla work (intricate Indian embroidery in metal thread) as long as 30 years ago. Kolkata-based Kallol Datta's emancipated designs occupy a middle ground between the genders. That he is inspired by the Islamic style of cloaking is a result of having spent his early years in Abu Dhabi, Dubai and Kuwait. He began designing abayas and kaftans in 2008, and called his version "sleeping bags". It's only as recently as 2015 (right in pic), when he introduced a range of hijabs with pattern cutting experiments of 3D inserts, embellished in tassels and foil print, and sold them at stores in Saudi Arabia and Kuwait. Masaba Gupta "It's a cool move," Ferreira says of Gupta and Datta's new designs. "Masaba and Kallol are mending broken ties between communities; it's like what the beard did post 9/11. At a time when the world began associating the beard with a political event, men from across cultures and countries embraced the beard. Solidarity is always heartening," feels Ferreira. Kallol Datta How do you explain using femininity as a tool of empowerment or rebellion?Masaba Gupta: We create clothes on steroids, what we call churning out "maal". While Tiger Lily, our S/S 2018 collection, has a lot of new prints, the colour palette of knockout pinks and bottle greens stays true to my brand's aesthetic. It's an elevated, easy-to-wear collection inspired by the modern-day woman. So it's online campaigns that allow me a creative release, a platform to have an opinion. I was empowered rather than fearful when shooting the campaign. There's always the fear of being trolled on social media, but then that happens anyway. Kallol Datta: It's not so much about being rebellious as it is about asking, how do you shroud yourself in fabric? As a designer, I pay attention to the fabric's form rather than the human form, hence layering and shaping remain at the core of my designs. It's also a familiar space [hijab] since I spent most of my early life in Abu Dhabi, Dubai and Bahrain. Why pick a symbol of conservatism?Masaba Gupta: The starting point of the idea was to talk about our best-seller sarees. And the saree has been constantly debated... in relation to how it should be worn by a specific type of woman to why the youth are apprehensive about embracing it. That's why the decision to showcase the saree worn by real women, as opposed to models, in the campaign shoot. Middle Eastern women think that a saree is intrinsically Indian, hence the idea of styling this drape like a hijab. Kallol Datta: I enjoy working with native wear clothing in a template form to realise silhouettes, which keep changing as layers are added or subtracted. The chador, manteau, abaya, kaftan or hijab become great building blocks for me to work with. At the same time, clothes-making for me is rooted in anthropology. When a politically engaging idea occurs to you, how long before you wonder if controversy will follow?Masaba Gupta: I don't want to unnecessarily stir up a controversy, and have people protesting outside my home. My brand's business head doesn't always agree with my social media posts (laughs). But I also believe that there's a difference between being brave, creative and downright foolish. That's why I put a caption to the image: 'This is celebratory and not a gimmick. I want women to wear a saree the way they feel best, in keeping with their traditions and their comfort. Most importantly, for them to not justify, why they chose to wear it the way they do'. Kallol Datta: It never crosses my mind. I've been mindful about not using symbols, or portraying national icons in my designs. How does fashion become political?Masaba Gupta: I find fashion a departure from controversy or politics. After India, my biggest business comes from Dubai and Kuwait. My job as a designer is done when my clothes inspire freedom in Muslim women to adopt fashion the way they desire. Kallol Datta: When Eastern concepts move to the West, they often get lost in translation. A woman wearing a hijab, a man in a kaftan - they become visible markers of their communities. The lack of representation [of these markers] in editorials and fashion journalism means that you're telling them, 'we choose not to see you'. Although Indian designers cater to Islamic countries, it's rare to see indigenous cultural markers in their clothes. as Designers discuss the challenge of making sustainable fashion that's sexy By www.mid-day.com Published On :: 15 Apr 2018 02:37:29 GMT The Story Re-Spun, Raymond's Khadi Project fashion show, was held on April 4 at its flagship store at Breach Candy The guests gathered at Raymond's Breach Candy store earlier this month for The Story Re-Spun, a showing of the menswear brand's latest line, had one question on their minds - how will the corporate professional accustomed to crease-free workwear warm up to whimsical, organic khadi? But the team at India's oldest fabric retailer knew they had pressed the right button when the campaign around their just-launched Khadi initiative clocked 15 million views in 30 hours on their social media page. Raymond has launched the collection in association with young designers Gaurav Khanijo, Anuj Bhutani, Ujjawal Dubey and Alan Alexander Kaleekal, and their choice of textile is the "fabric of the nation", which they call universal, and one that transcends age and social barriers. The brand has used its fabric technology expertise to lend khadi, drape and wash-and-wear qualities. The silhouettes and prints which comprise the collection of suits, tuxedos, bandhgalas, bomber jackets, hoodies, shirts and kurtas, are modern and approachable. To complete the look, on offer is a range of khadi accessories - ties, pocket squares, cuff links and shoes. Varanasi-based textile developer and designer Hemang Agrawal's "The design and technical teams from Raymond worked extensively with clusters of khadi weavers from across the country for over 12 months to give the fabric a whole new face and form," says Gaurav Mahajan, President-Apparel Business, Raymond. Style observers see Raymond's move as one that seeks to give sustainable fashion a nifty edge, a trait often compromised in the drive to produce ethical fashion, and promote indigenous crafts. Fashion entrepreneur and consultant Sabina Chopra says, in the absence of labels offering appealing sustainable designs at reasonable prices to the young buyer, Raymond's model could be one to ape. "Collaborations [between designers and fabric manufacturers] could be the way forward if we are to impact purchase," she thinks. Summer 2018 collection reimagined Benarasi textiles to make minis and box-pleated dresses, and used Tanchoi and Katarwan weaving techniques to create the houndstooth pattern While the world over, sustainable fashion champions fair trade, local techniques of production, and reuse and upcyling, in India, an ancient tradition of craft has moved focus to the revival of textiles. That it is currently also a political talking point, makes it complicated. "In India, we stress on sustainable fashion from an aesthetic point of view, motivated by the revival of textiles. There's too much of one thing, without regard for price point, the young customer demographic, fit or design," feels Delhi-based designer Arjun Saluja. He is currently occupied with creating a collection from upcycled cotton, with a focus on minimum fabric wastage. And so, the sustainable cause is a subtle story behind the collection, not its central identity. After showing at LFW S/R 2018, The Good Loom showcased its summer collection of casual menswear and sarees, designed with a special focus on ethical production and getting the right fit at ARTISANS' gallery at Kala Ghoda last week Hemang Agrawal, textile developer and designer from Varanasi, agrees. "Shoppers buy basis design and style. The ethical credentials of a label come later," he says. Living in a city that's at the heart of the ongoing revival of Benarasi weaves, he speaks of fly-by-night designers jumping in to claim to own the cause. Agrawal decided it was time to rewrite the script; one that tested the sprightly, dressy competence of time-honoured Indian weaves. Un-Revive, his summer 2018 collection, included modern-day essentials such as minis Mary Quant-would approve, trench and box-pleated dresses, maxis, cropped pants and palazzos. He pinned his interest on the sustainability mast by working with master weavers from his hometown to create tartan checks, polka dots, houndstooth and geometric patterns using the Tanchoi and Katarwan techniques. "Why can't handlooms be young?" he says, explaining the thought behind using one of India's oldest textiles to create plucky, young designs. Chopra wonders why sustainable clothes are devoid of colour or refined cut. A chunk of craft practitioners focusing solely on revival of textiles are taking for granted the design element of clothing. "Hence, the final tailored garment tends to be weak on cut, giving us tent-like, boring clothes…who decided colour is not cool?" she says. Veteran designer duo David Abraham and Rakesh Thakore of A&T push the boundaries when the former says, "Theoretically, you could do anything with craft, even design a bikini or hot pants. The trouble is, designers are not intervening into developing their own textiles. Ideally, they should." A&T made a compelling case for ethics-meets-aesthetics with the recent #SadakSmart collection. Encouraged by DIY countercultural streetwear trend, the range looked at indigenous shapes, such as the salwar, kameez, saree and ghagra, and tipped them in favour of teasing everyday styles using updated versions of sequined Chanderi, aari embroidery, and floral patterns inspired by the great Indian chintz. Not so long ago, anti-fit fashion found its moment internationally, and India, a land of drapes, was more than happy. The unstructured silhouette became an approved form of anti-fit, and handloom - one of the heroes of sustainable fashion - tagged along. Saluja points out that a change in design will take place only when we break the myth that hand-woven equals anti-fit. "The latter is about how you play with both, fabric and body - kiss it or turn it away from skin. Lend it form or leave it formless. Fabric development plus emphasis on silhouettes is key." And so, good design is both the problem and the solution. Sustain, a 12-year-old apparel vertical of the Good Earth brand of luxury lifestyle, insists on being known as classically Indian. "We are not interested in being hip or cool. But we understand the value of offering modern clothing options that highlight India's incredible workmanship. It might be difficult to make khadi glamorous, so we've started working with Bhagalpuri silks for evening wear. Similarly, we've updated traditional embroideries by combining them with fresher colour ways," says Deepshikha Khanna, head of Sustain. Rozana, a sub-brand of Sustain, positions itself as daily tonic for everyday wardrobe woes. Aimed at younger clients, it's a line of separates. Sassy shirtdresses, long and short kurtas, lehengas, kalidar kurtas and Hiba trousers are made in malkha cotton, khadi and muslin, priced between Rs 4,500 and Rs 22,000. Interestingly, timely interest by two of India's biggest fashion weeks has plucked the sustainable fashion lobbyists from their craft-based address to dazzling runways with dedicated show slots. The Autumn/Winter 2017 edition of Amazon India Fashion Week addressed the relevance of handlooms, while highlighting sustainable businesses with, The Handloom School. Supported by Good Earth, nine designers including Sanjay Garg, Neeru Kumar, Gaurav Jai Gupta, Rajesh Pratap Singh, Rohit Bal, Péro and Ekà worked with weavers and textiles designers under the watchful eye of textile revivalist Sally Holkar. For the last seven years, Lakmé Fashion Week has dedicated a day towards the promotion of Indian crafts, recycling and re-purposing. "It started as a means to encourage dialogue on sustainable values. And with initiatives like #CraftisCool, we are working towards creating viable collections that appeal to high street sensibility," says Gautam Vazirani, fashion curator, IMG-Reliance, organisers of LFW. This season, LFW collaborated with The Good Loom, an artisanal brand from GoCoop, (the first e-commerce store to win a national award for 'Marketing of Handlooms') to present a selection of smart, casual menswear and sarees, with a special focus on ethical production and getting the right fit. It was a sincere attempt at bridging the gap between how the country's Instagram generation interprets fashion and its duet with indigenous craftsmanship. "That sustainable fashion should be sexy, and not stop at mundane or homogeneous, is now our agenda. The millennials don't see themselves dressed in kaftans or anti-fit shapes," adds Vazirani. But he's up against a challenge. Designers often tell him of the 35+ consumer loving the anti-fit way. Saluja has an answer to that. "Let's not be blinded by the revival manifesto. Sixty per cent of India's population is under 35, and they are seeking stylish ready-to-wear options." Challenge of handlooms: Colour forecast doesn't figure in our schemeFor 11-year-old label, Amrich, led by Delhi-based Amit Vijaya and Richard Pandav, instead of reinforcing a divide between ethical and non-ethical consumers, they prefer to be known as a Western wear brand of separates, infused with enough versatility to be worn in Indian styles. "Working with handlooms is not without its unique set of challenges. For example, we can't afford to follow the colour forecast, since we work with natural dyes. Plus, we work with tricky timelines. We have to work two years in advance since there is lot of back and forth between craftsmen and our design team," says Vijaya. Luckily, the two design and develop their signature shibori in-house, making it possible to control how the garment is cut. "It also allows us to keep the price affordable. The shibori range starts at Rs 13,000," he adds. The 22-event F1 season has been decimated by the Coronavirus with nine races either cancelled or postponed. The French Grand Prix scheduled for June 28 is also in doubt as is the Belgian Grand Prix, set for August 30. F1 chiefs have floated the idea of making up for lost time by staging races on successive weekends or even having two races on the same weekend. Staff burnout issue However, Ferrari star Vettel fears such a move could lead to burnout for team staff. "We drivers are a little privileged," Vettel told reporters by teleconference from his home in Switzerland. "Of course, the races are tiring but there have to be limits for the staff. They must rest. "We must also see if it is easy to reschedule races, if the circuits are not already taken. Many questions remain. I think the schedule will be busier, but 10 consecutive weekends is not realistic." Vettel suggested that he would favour staging races without fans if it allowed a quick resumption as long as it did not become a common feature. Other sports have already toyed with the idea of staging events behind closed doors. For example, the US PGA Tour on Thursday announced plans to resume in June, with the first four tournaments being closed to spectators. "It's complicated," admitted Vettel. "On the one hand, there is the health of the sport, on the other, that of the people who work in the paddock and especially the fans. "There are several options. No one likes to run in front of empty stands, but we will have to see if it will not allow us to resume much sooner. The first races will probably be a little different, but not too much, I hope, because we want to run in front of the fans." Vettel insists that for him even a 10-race season is just as valuable as a 22-race campaign. However, he admits that the damage to the sport caused by the pandemic could be fatal for the smaller teams on the grid. 'Small teams in danger' Without racing, the massive TV and sponsorship revenues have dried up. Half of the teams have already started furloughing staff. Teams have agreed to lower the spending cap from $175 million to $150m. "Some small teams are in danger and, as a family, F1 has to take care of its own." And given their limited sources of income due to no sporting activity, it's unfair if these athletes are refused their due. Maharashtra's long distance-running trio of Jyoti Gawate, Srinu Bugatha and Kalidas Hirave emerged champions at the Dailyworld Marathon in Chandigarh on March 31 last year but are yet to receive their monetary rewards. Women's full marathon winner Gawate (who clocked 2:50:02) and men's full marathon champion Bugatha (2:25:55) were both entitled to cash awards of R2 lakh each, while half marathon winner Hirave's (1:06:02) prize money was R1,25,000. Among the three, only Bugatha has received a part payment so far. "I have been calling the organisers several times since last year for my prize money. I have spoken to different people each time. Initially, a person called HS Gujral gave me assurances. Then, one Ravi Sharma spoke to me, followed by some PC Kushwaha and now the last person I spoke to a few days ago is one Manish Tiwary. But my money has still not come. An amount of Rs 2 lakh is huge for an athlete like me who is jobless. I have won over 15 marathons till date and each time, I have received my prize money within 45 days," Gawate, 33, who lives in Parbhani, told mid-day on Tuesday. Army Sports Institute (Pune) athlete Bugatha, who is currently at home in Vizianagaram, Andhra Pradesh due to the lockdown, said the organisers are not even answering his calls. "Of the R2 lakh, I received only R50,000 and that too just a month back after a lot of follow ups. Now, they're not even responding to my phone calls. I requested them many times, pleading that it's my hard-earned prize money but to no avail," said Bugatha, 27, claiming that the Ethiopian and Kenyan runners received their prize cheques immediately. The trio are now contemplating legal action. "We have only been getting false assurances from the organisers that they will deposit our money soon. We have made dozens of calls to them. Now, Srinu, Jyoti and myself are thinking of sending them a legal notice," said Hirave, 27, from his home in Wai, Satara. Dailyworld's Editor-in-chief Tiwary told mid-day that the cash awards will be handed over soon. "This event was done in association with the Punjab government. as Thomas Bach: Postponing Tokyo Games will cost IOC several hundred million dollars By www.mid-day.com Published On :: 30 Apr 2020 02:09:48 GMT The postponement to 2021 of the Olympic Games in Tokyo because of the coronavirus pandemic will cost the International Olympic Committee (IOC) "several hundred million dollars", its president Thomas Bach said on Wednesday. "We already know that we have to shoulder several hundred million US dollars of postponement costs," the German wrote in a letter to the Olympic movement, warning that, while the IOC would honour its financial obligations to Tokyo, it would probably have to make cuts. "We also need to look into and review all the services that we provide for these postponed Games," he said. "The IOC will continue to be responsible for its share of the operational burden and its share of the costs for these postponed Games." The IOC, which has approximately $1 billion (926 million euros) in reserves, took the historic decision to postpone the Games, scheduled to open on July 24, until July 23 to August 8, 2021. If the coronavirus pandemic is not brought under control within a year, the Games cannot be postponed again and will be cancelled, the head of the organising committee (COJO) Yoshiro Mori warned on Tuesday. A task force, which brings together the IOC and various partners, including COJO, "has established the priorities and management strategies to make these postponed Olympic Games feasible and successful", Bach said. These include creating "a safe environment with regard to health for all participants". "At this moment, nobody knows what the realities of the post-coronavirus world will look like," he said. "What is clear, however, is that probably none of us will be able to sustain every single initiative or event that we were planning before this crisis hit." He added that the IOC should also view the crisis as an opportunity. "We can fairly assume that, in the post-coronavirus society, public health will play a much more important role. Sport and physical activity make a great contribution to health," he wrote. Bach also said the Olympic movement should consider its relationship with esports in light of social distancing. "Whilst maintaining our principles by respecting the red line, with regard to the Olympic values, we encourage all our stakeholders even more urgently to 'consider how to govern electronic and virtual forms of their sport and explore opportunities with game publishers'," he said. Prolonged illness Waralikar, who had been unwell for the last couple of years, went on to become one of the finest kho-kho statisticians, given his vast knowledge of all the players and records associated with it. Shrirang Inamdar, 65, the youngest kho-kho player to be honoured with the Arjuna Award at the age of 18, recalled his association with Waralikar during Maharashtra's victorious campaign in the national championship at Patiala in 1974. "I was leading Maharashtra for the first time and Waralikar sir was our team manager. His expertise and guidance helped us win that title. He was a genuine all-rounder. He served the game as a player, coach, selector, umpire, administrator, commentator and statistician. He was like Google. You could ask him anything and he would give you accurate details. He had a unique style of explaining the nuances of the game. He analysed opposition teams well and always advised us on strategies," said Kale. Fellow statistician Arun Deshpande doffed his hat to Waralikar. "He is the originator of kho-kho statistics in India. It's a challenge to maintain statistics of a sport that is not well documented but seeing his passion, we were inspired to continue collecting and preserving data associated with the game," said Deshpande, who has been working on kho-kho statistics with Waralikar since 1970. We soak in the pale blue and stone grey décor, with charming latticework, candle-lit tables and abstract art adorning the walls, half expecting a performance of belly dancers. Instead, two staffers bring out a massive, 33-inch Bohri thaal, laden with nine types of starters, four pickles and two salad options. Pineapple Halwa, Kesar Pista Sancha Ice Cream, Amba Roti, Paan and Mukhwaas Owner Avinash Bhatia gets the reaction he's hoping for - our gaping mouths. "Bohri food has always been close to my heart, as I grew up with friends from the community. I sourced traditional recipes from them," says the Sindhi businessman, who hails from a family of property developers. He also has experience of running the family-owned Club 9 at Pali Hill, which replaced Hungry Bunny, a cosy café that his father had launched back in 1990s. "The family thaal feeds seven guests. It includes mains and desserts too," he says as he ushers us to a low-seating table with seat cushions. Then, we move on to fried-till-crisp Chicken Kheema Samosas and Chicken Shahi Roll, where crumb-fried barrels burst with meaty, cheesy flavours. They're washed down with refreshing, watermelon-flavoured Bir Soda, as integral to the community as Pallonji's is to Parsis. For veggies tooThe vegetarian options include Soya Chaaps, where the mock meat is slathered with a makhani-like gravy. We also enjoy the salads - Kokam Bateta, featuring well-cooked potatoes hidden under a thick, tangy-spicy coating, and Kachumber laced with silken, mashed brinjal. The highlights are the melt-in-the-mouth minced lamb Galawati and the skewered Seekh Kebabs, where the soft and juicy mutton packs in robust, spicy flavours. The Nihari wins us over with its soft and succulent lamb cooked in a well-spiced stock with a hint of fennel seeds that we relish with fluffy Pizza Naan. The Bheja Hara Masala scores for its creamy coriander-based gravy, whose flavours are soaked in by goat meat. The dum-cooked Bohri Biryani, with succulent chunks of mutton and potatoes, turns out to be a lighter version of its north Indian sibling. It's long rice grains are laced with the right amount of whole spices and slight tang from the curd. A smoking-hot piece of coal on a bed of mildly flavoured rice and lentils takes the modest DCP to the next level. The flavour lingers in our mouth long after we've tucked into the comforting dish with Palidu, a drumstick stew tempered with cumin and thickened with Bengal gram flour. At a shoot for mid-day recently, chefs Kelvin Cheung (Bastian), Karishma Dalal (Bombay Salad Co) and Pooja Dhingra (Le 15 Cafe) lamented the lack of composting facilities in the city. They say they have been trying hard to find an eco-friendly solution for their waste, much of which ends up being handed to the local civic body and ends up in a landfill. They have considered joining forces and starting their own composting facility, but it's early days. Cheung, Dalal and Dhingra might find kindred spirits in other city restaurateurs who face a similar challenge. While some compost a small percentage of the garbage they generate daily, others try and reuse, some control output by cooking on a need-per-order basis, but the greater amount gets binned. Bombay Salad Co, Bandra WestWaste generated every week: 700 kgWaste disposed organically every week: Approx 50 kg Karishma Dalal (in pic), who runs Bandra's hip Bombay Salad Co, is waiting for someone to come up with a novel idea that could use all the organic waste her restaurant generates. "As we are a salad bar, most of our waste is made up of peels, stalks and leaves. Around 15 per cent is just cabbage!" As a restaurateur, it would be a huge economical undertaking for Dalal to send her garbage to a large composting facility, which Mumbai doesn't seem to have . "I have kept an eye out and nobody collects it on a large scale. The ones who do, in the suburbs, want me to arrange transportation."What sheâÂÂis doing right: Distributing garbage to locals who compost at homeSolution: Dalal is trying to do her bit. Every week, she gives around five kg to Bandra residents who compost at home, and around 20 kg every three days to a friend from Pune who uses it in his nursery. I do believe with the changing food scene in the country; chefs and restaurant owners being more aware about practices like these, it will soon be adopted too."What they are doing right: Achieve minimal waste by using ingredients to the maximumSolution: "For example, we use the vegetable peels/fish bones to make stock which we use to cook rice, make soups and base for curries. Off cuts of meats and seafood are used for the kitchen staff meals. But we do land up with a lot of egg yolks as we use more of whites." She does say that in ideal conditions, they would like to compost this waste themselves or via an agency, however, as per regulations, they would need a license to do it. "At our end, we try to keep the waste down and only hope that the BMC makes good use of it." What they are doing right: Reducing waste generated by ordering only what's necessary The restaurant works on an aggressive inventory system with the core team defining approximate sales per day. "This experience has made us almost intuitive, and we know how much to order for a particular day. Ordering right is the key here." Saigal also insists on using ingredients across dishes to ensure less wastage. Lord of the Drinks, Andheri WestWaste generated every week: Approx 700 kgWaste composted every week: NoneAt the Andheri hotspot, a majority of its waste comes from leafy greens and other vegetables since not all parts of every vegetable can be consumed. "Therefore, waste from meat is lesser," says JJ, Corporate Chef. The restaurant has tried composting, but it's not cost effective. "We use the segregation method. Due to lack of space for storing waste in Mumbai, a part of it usually gets disposed in garbage vans. I think the answer could be to install composting machines. However, these may not be cost effective for every establishment," he says.What they are doing right: Segregating dry and wet garbage and using the former for manure, inhouseSolution: The food waste is usually segregated between dry and wet. "Composting of dry garbage is easy at the restaurant level as most of it gets reused while gardening and makes for good manure," says JJ. But most of the wet garbage is binned. The facade of the three-level gastropub, which opens this Saturday, might seem like it’s bovine inspired but a close look reveals a map of London, the city that serves as an inspiration for this pub, with the river Thames running through it. The 6,000-sq ft property is helmed by ad filmmakers Vivek DasChaudhary, Sanjay Shetty and Ricky Singh Bedi, with Dhaval Udeshi as the managing partner. The first things we notice when we enter are the custom-made, taxi-shaped tiles. The bar features cab grills lining the front. Colourful pipes run across the ceiling, to form a map of the London Underground. The table tops are printed with artwork inspired by Abbey Road. Sherlock in a Pickle The London inspiration continues on the menu, albeit in a less obvious manner. It has a wild mix of cuisines (think Prawn Thai Broth, Moroccan Fish Tikka and Madras Curry Scotch Egg). Chef Nagraj Bhat says the menu speaks of London’s cosmopolitan nature, and stories from his time spent there. The south Indian dishes are an ode to his mother’s cooking. Everything is made in-house, including the sausages, sauces and breads. Ami Shroff, who has created the bar menu, informs that the infused liquor and shrubs are made in-house too. Bhat picks some of his favourites for us to try. The first is Truffle-scented Dark Chocolate Caramelised Cauliflower Veloute ('260). A soup is not something we would normally have at a pub, but the dark chocolate flavour, heightened by the bitter-sweetness of the caramelised onion, makes it a must-try. From the salad spread, we are served Cajun-spiced Prawn and Kale Chips Salad ('385). Grilled pieces of spicy pineapple add a punch to the dish, with drops of mango jalapeño coulis offering a sweet-and-spice combination. By now, Shroff is ready with her cocktails, the first concoction being The Trip ('725). A pleasant woody flavour of turmeric envelopes our palate, thanks to the gin infused with the healthy ingredient. Saffron honey water and fresh orange add to the unique flavour. It is followed by Sherlock In A Pickle ('675). The savoury cocktail features Earl Grey-infused vodka mixed with wine-beetroot reduction, sweet lime juice and pickled gherkins — inspired by the culinary favourites of the fictional sleuth. Beer lovers can opt for Picadilly Circus ('450), made with lager, espresso and cocoa-infused whisky with bitters. There is a section dedicated to gin and tonic and martinis for the Londoner in you. Only paper or metal straws are offered, to reduce plastic usage, a move that we wholly approve of. Our food picks also include Alleppy Prawns Curry in Spicy Rosemary Warqi Taco ('580), Truffle Scented Welsh Rarebite Doughnut ('365), which makes for a great bar bite, and Theecha Tepenade Flatbread ('575) made with beer-fermented flatbread. For dessert, try their Banana Rum and Toffee Parfait ('465). Bartender Manish Solanki has created a line of beer cocktails, marrying clove and coriander notes with the orangy finish of Hoegaarden. We try the first one, a crispy wheat beer with lychee. One sip and we are sold. We stop only when we try another variation with chamomile tea. The final frontier is a beer sangria with a mix of passion fruit, elderflower and chopped fruits. "The Mexicans love their chilled beer in the warm weather, but they also popularised the Michelada [made with beer, lime juice, and assorted sauces and peppers], inspired by the Bloody Mary. Indians, of course, have long consumed the German-inspired Shandy, mixing lemonade with beer," says Solanki. A beer cocktail is a concoction that carries mixed notes of mixers, other alcohol and ingredients, with beer dominating the taste. Last month, Bandra's Olive Bar & Kitchen hosted a brunch in collaboration with Hoegaarden. To match steps with the beer cocktails, executive chef Rishim Sachdeva created a menu executing his favourite techniques of fermenting, curing, cooking at low temperatures, flash cooking, smoking, pickling, etc. "For the brunch, we incorporated orange, coriander and wheat in the menu. For a fried chicken, we soaked the meat in a 2 per cent salt and orange brine; the dressing had fermented coriander stalks for acidity and bitterness to cut through the sweetness from beetroot crumbs. The orange-cured snapper dish was served with kombu and bunito dashi to bring out the umami. To this, we added coriander oil to enhance its flavour profile. And finally, we glazed the fish with sweet-sour orange butter," says Sachdeva, adding that his focus was on ensuring the food did not fall flat in front of the fizzy drink. According to Binny Dhadwal, founder of Drinq Barmen & Academy, beer cocktails haven't quite found a fan following yet. "Consumption of any cocktail is a trend that's barely a few years old in India. There would be pageants like September King and Queen, games and cane product stalls that everyone would throng to, and all-night long jam sessions by Catholic bands at Mount Carmel's September Garden with an entry fee of `1. We would binge on potato chops, candy floss and kadio bodio, a deep-fried sweet stick of refined flour dipped in sugar. Even black chana would be heaped at stalls," recollects 54-year-old Netto, who offers black chana and kadio bodio as complimentary treats at BKC's SodaBottleOpenerWala as part of the outlet's ongoing festival, Bandra Feast, which recreates the fair experience. East Indian Pork Sorpotel In collaboration with chef de cuisine Danesh Vakshoor, Netto has created a special menu comprising East Indian and Goan delicacies. The menu features Mutton Potato Chops (Rs 195), where fried-till-golden breadcrumb crusted mashed potato shell is stuffed with minced meat, and Vegetarian or Chicken Lonvas (Rs 295), cooked with the famous East Indian bottle masala and thick coconut milk. It also stars East Indian Pork Sorpotel (Rs 295) and East Indian Vindaloo (Rs 295) where the pork is marinated overnight and slow-cooked. "Most homes in Bandra would be open to guests till midnight, who would arrive from different parts of the city and beyond to seek blessings at the basilica. I remember my mother making kilos of sorpotel and vindaloo. I've used her traditional recipes for the menu," she adds. End the meal with Thali Sweet (Rs 175), a festival speciality made with coconut semolina and eggs. Sophia Netto The restaurant has also been dressed up with ribbons and balloons that are a throwback to the helium balloons, which were a common sight at the fair. The line-up also includes a retro jam session with in-house DJ Farhan and saxophonist Amar Sukhi on Thursday night, and breakfast housie on Sunday. Mumbaikar Lloyd Rodrigues will conduct the session where he will teach participants how to make four East Indian dishes. The first is the Mutton Stew, which is a combination of vegetables like carrots, peas, onions and tomatoes, and mutton blended with mild spices. The second item on the menu, shares Rodrigues, is the East Indian Potato Chops, a much-loved snack featuring crumb-coated potato mash stuffed with spiced minced meat. "The third is a rice dish, which is colloquially referred to as Wedding Rice, since it is usually prepared as part of the East Indian wedding spread," informs Khan. The dish is akin to a pulao, and comes topped generously with fried onions and shavings of almonds and cashew nuts. No meal is complete without dessert. And the sweet dish that participants will learn to make is a unique preparation called Letri. Ashish Singh, the corporate chef of 13 of the outlets — with another one coming up on Janpath and Mumbai's first branch launching at Kamala Mills today — tells us that the winner ate two-and-a-half of the burgers, while the runners-up gave up at two and at 1.75. Consisting of a 250gm mutton patty, 70gm cheddar cheese topping and 15 to 20gm of jalapenos, respectively, all stuffed in a six-inch bun, this burger is definitely not for the weak-hearted. But if you love gastronomic challenges, it's a must-try. We make a mess when we try one, but relish the paprika-herbed patty with crunchy veggies and a cheesy aftertaste. Panzanella Salad A board displays 2,08,133 when we walk in, the number increasing with each Jucy Lucy sold. A look around the vibrant 80-seater space, opposite Farzi Cafe and cushioned between The Beer Cafe and Love and Cheesecake, reveals it to be family-friendly. The booths come with LCDs; there is a low-seating area for noisy groups and a bar section to slip into nightclub mode. Owners Sharad and Vikrant Batra have also got Michael Swamy — who opened Nueva, a South American fine-dine, with the duo in Delhi — to create a recipe book based on the 80 dishes from the menu, which will be launched in Mumbai next month. Anti-oxidant Smoothie We start with ISBT Makhani Maggi (Rs 285), loaded with chunks of butter that melt into the creamy gravy. Our cholesterol level shoots up even before we take the first bite of the spicy, Indianised recipe that may receive scorn from Maggi purists. But we are surprised at ourselves for actually polishing off this bowl. The Sushi Chirasa (Rs 825) — traditionally served as a bowl of sticky rice, with crabsticks, avocado, tuna, salmon and peppers tossed in — is completely avoidable as the sticky morsels fail to impress us. ISBT Makhani Maggi We cleanse our palate with a Nimboo Anardana Shikanji (Rs 205), which is garnished with coriander and embodies the best of a chatpata flavour. By the time we reach the Eggs Benedict (Rs 375), we are wishing that the dishes went easy on the butter, since they are comfortingly palatable without it. The Benedict comes on a bed of moist croissant and bacon, and the yolk oozing out of it tempts us to dig in. Jucy Lucy Burger The croutons in the Panzanella Salad (Rs 375) are crunchy, and so are the French beans, broccoli and babycorn, flavoured with Parmesan and herbs. We also sip on an Anti-oxidant Smoothie (Rs 325), which has chia and flax seeds, strawberry and yoghurt. Finally, slow claps and drum rolls for Mom's Butter Chicken Tikka Masala (Rs 625), please. This one's a family recipe, with the chicken smoked in the tandoor and tender to bite into. To our delightful surprise, the creamy tomato gravy is sans cashew nuts. Harsh Mav and Shaunak Mukherjee "The concept is born out of the understanding of what being broke towards the end of the month feels like," begins Harsh Mav, who, along with childhood friend Shaunak Mukherjee, is launching a space where you can drink on a loan and repay it in EMIs, among other things. Right off the bat, they faced a series of hurdles. They were turned down by banks for a loan, and investors weren't keen on the project due to the duo's lack of experience in the industry. Mav finally mortgaged his family home for R90 lakh, while Mukherjee managed to acquire a loan of Rs 43 lakh. They even found a space in Lower Parel's bustling Mathuradas Mills. That's when things took a turn for the worse. "We had put down the deposit, paid three months' rent, and started work on the interiors. Then, suddenly, the BMC put a halt to everything, claiming there was a stay order on the property, a detail the landlord had failed to mention," says Mav. Furthermore, the landlord refused to return their money, which meant they were back to where they had started - with nothing. "We're going to take legal action to recover the money, but for now, we want to get the project going. That's why we opted for crowdfunding," says Mav. Moving forwardNeedless to say, not all the funds will come from the Ketto campaign. Opening an eatery in the city requires a far larger sum than the Rs 10 lakh the duo is trying to raise. "Right now, we have most of what we need to get the pub going - food and beverage suppliers, staff, and brand tie-ups. We're looking to gather funds for the interiors," says Mav. The Ferrari driver lapped the floodlit Marina Bay street circuit in one minute, 39.491 seconds, the fastest ever set around the 5-kilometer long track, in a dazzling display of speed. Max Verstappen went second fastest and will start alongside Vettel on the front-row with his Red Bull teammate Daniel Ricciardo third. Championship leader Lewis Hamilton, Vettel’s title rival, was only fifth ahead of teammate Valtteri Bottas. The Briton, seeing a hat-trick of wins this weekend, seized the championship lead with victory at the last race in Monza.
