Copenhagen-based Empirical Spirits is on a mission to bring new flavour to alcoholic spirits. Having previously worked at famed restaurant Noma, Lars Williams is eagerly leading an investigation into brewing and distilling, looking at flavours, traditions, technologies and techniques to see if things could be done differently. Why can’t spirits be seasonal, as food can, or have vintages, as wine does? Why should spirits be required to have an ABV of 40 per cent when they could taste far better at 20 per cent? WIRED went to Copenhagen to meet the team and see how they produce experimental drinks out of hacked-together machinery.

Poaching the Poachers: How Kenya is Saving Elephants with Night Vision Tech

In the last decade, Africa’s elephant population has declined by around 110,000, primarily due to poaching. The slaughter of African rhinos has also skyrocketed — 1,175 were killed in South Africa in 2015 alone, compared with 13 in 2007. Because poachers operate mostly under the cover of night, this type of crime is hard to tackle. In December 2012, Google awarded WWF a $5 million grant to tackle the poaching crisis through technology, launching the Wildlife Crime Technology Project. They have collaborated with FLIR, a thermal imaging company, to design a new infrared camera capable of detecting human movement at night, and have installed cameras around Kenya's Maasai Mara Conservancy. Since the programme started, local rangers have nabbed over 150 poachers. Terah Lyons: AI and diversity – the cultural and societal context behind artificial intelligence

Terah Lyons is the Founding Executive Director of the Partnership on AI, which was established to study and formulate best practices on AI technologies and advance the public’s understanding of AI. World-class chef rates the best vegan burgers in the UK | On Location

To find out how well the latest vegan burger offering fares from a professional point of view – and if they really do give actual meat a run for its money – we asked chef Marcus Samuelsson to put his tastebuds to task: with his mix of southern American, Ethiopian and Swedish food, Samuelsson knows what makes for a delicious burger. Samuelsson provided the menu for the Obama Administration’s first State dinner, had a three-star restaurant review from The New York Times at the age of 24, and owns a number of restaurants including Red Rooster – in both Harlem, New York, and Shoreditch, London – and, most recently, Marcus in Montreal, Canada. To give each of the seven vegan burgers in our test a fair start, we dressed each pattie with a tofu-based mayonnaise, vegan cheese, a slice of tomato, lettuce and red-onion dressing before topping it off with a vegan brioche bun. The testing took place in Samuelsson's Shoreditch-based restaurant Red Rooster at The Curtain Hotel. Only burgers available to buy in UK shops were eligible (sorry, no Impossible Burger yet). Inside CopenHill: The clean energy plant with its own ski slope | On Location

In Copenhagen, Denmark lies Amager Bakke, a unique power plant. Not only is it the world's cleanest waste-to-energy facility, it's also home to a man-made mountain called CopenHill with its own ski slope, the world's tallest climbing wall and challenging hiking trails up the building where you'll find the best views of Copenhagen. Opened in October 2019, the building was designed Bjarke Ingels Group (aka BIG) with an aim to create a building that can "contribute positively to the city, become part of the city, and even to be a landmark of the capital". The plant serves 680,000 people and takes waste from up to 300 lorries each day. Its steam turbine produces 63MWh of energy, while its heat exchangers are used in a district heating system.
